Horner’s culinary journey started at home, growing up with a mother who ran a high-end catering business for over 30 years. By the time he was seven, he was already assisting in the kitchen, developing a deep respect for the effort and creativity behind exceptional food. His mother’s catering ranged from gourmet comfort food to the finest delicacies, giving Christian a diverse palate and an early love for experimenting with flavours.

“For lack of a better term it’s just in my blood,” Horner said. “She would never follow a recipe. She would overlook a recipe and see it but then would close the book and adapt it on her own.”

Through his teenage years and early adulthood, Horner found himself gravitating toward kitchen jobs. His passion for cooking was undeniable, but so was his dream of becoming a firefighter. Inspired by the fire hall across from his childhood home in downtown Toronto, he decided to pursue both paths—one fuelled by discipline and camaraderie and the other by creativity and flavour.

The spark of Fire in the Kitchen

Fire in the Kitchen was born in 2009 at a pivotal moment. While catering a birthday party for a friend’s wife, Horner served wings seasoned with his lemon-pepper rub.

“I was catering a buddy’s wife’s 40th birthday, so to get things going I put out 250 wings,” he said. “I had this seasoning I always used. A lemon pepper-based seasoning. The party went off, the food was excellent, and everyone had a good time. After it, my buddy told me, three people came up and insisted he get that rub from his caterer. So, a light went off.”

The dish was an instant hit. Guests raved and demanded jars of the seasoning to take home. Encouraged by their enthusiasm, Horner packaged and labelled his first batch and visited a local butcher with it. Within a week, his butcher had sold out of it, and Christian saw the potential for something greater.

Driven by his “mad scientist” curiosity, Horner expanded his repertoire, developing rubs for everything from burgers and seafood to vegetables and steaks. With no grand plan but plenty of determination, he began knocking on doors and pitching his products to independent food shops and butcher stores. Over the first few years, his tireless effort landed Fire in the Kitchen products on the shelves of 25–30 establishments.

A philosophy shaped by gourmet barbecue

Horner’s catering background naturally led him to embrace gourmet barbecue—a laid-back yet flavour-packed style of cooking. While his mother’s catering epitomized white-linen elegance, Christian gravitated toward hearty, communal meals that brought people together. Whether it’s wings, ribs, brisket, or crispy chicken, his dishes celebrate bold flavours and casual gatherings. “I’m not into tablecloths and 12 pieces of cutlery,” he said. “I want to celebrate good food, drinks, and good people.”

He’s passionate about the versatility of barbecue techniques—smoking, frying, grilling, and even using cast iron skillets. For Horner, cooking is about connection: “I love the idea of sitting at the bar, eating good food, and just having a conversation with the people around me.”
